Fried Rice Restaurant Style Recipe
A great way to use up leftover rice, this quick fried rice cooks up with frozen peas, baby carrots, eggs, and soy and sesame sauces.

This is a solid, simple fried rice recipe that works with any veggie/meat additions. My only change is not to make the rice fresh (hence 4 stars). My ex bf is half Thai & he made fried rice often- always with leftover rice that was a few days old. It's drier than fresh rice and better soaks up the flavors of the oils & soy sauce. I made a half batch since I only had about 2 cups cooked rice. I chopped a fresh carrot & boiled to soften. With the eggs- start with a good amount of oil in the pan & you want high heat so they cook really quickly & evenly distribute among the veggies. I cooked onion & garlic, added the carrots & some leftover cooked asparagus & ham, then cracked in the eggs. I found that 3 healthy shakes of soy sauce and a couple light dashes of sesame oil were sufficient (I find sesame oil kinda strong).

This was ok, but nothing fantastic. I used the veggies I had on hand in addition to the peas and carrots in the recipe. I found this bland. I guess I want more than just soy sauce to flavour my fried rice. Will keep searching for a better recipe.
Easy to make. My family really enjoyed this meal. Since I don't routinely cook with soy sauce, I did have a little trouble determining how much to use. Otherwise the perfect recipe for fried rice.
