Great recipe and the flavor is wonderful! I worked at a German restaurant for a while and my boss taught me everything I know about German cuisine. She was from Germany, only having been in the states for 5 years and we always made everything fresh and from scratch. This recipe is a sure winner and may have even more flavor than the spaetzle we made there! Will definitely be keeping this as my main spaetzle recipe from now on. To make this, I used a hand grater to push the dough through. I didn't have a proper spaetzle maker/press that we used at the restaurant, but a hand grater works just the same. Don't follow the recipe time frame, either. As soon as the dumplings float, they're ready for take-out. If your dough seems a little too thick, add a tbsp or two of water. I do this every time I make them and it really helps lighten the texture. You want elastic dough for spaetzle! This recipe is delicious! I was trying to make an authentic German meal, so I made this as a side dish. Everyone loved it! I wasn't sure about the nutmeg (my regular recipe for noodles and dumplings does not use nutmeg), but I went for it and was glad I did. Delicious! Also, I don't have a spaetzle maker, so I just dropped them by very, very tiny spoonfuls. It took forever. I suggest using a spaetzle maker if you have one.

Mixed in the food processor and scooped into a quart freezer bag, then cut three pencil-sized holes in the bottom seam of the bag and squeezed out in 3-4 inch segments. Scooped into a pan with olive oil and butter with sauteed shallot to fry a bit. My six year old had three helpings, my ten year old wouldn't touch it. I found it tasty and the hubby didn't care much for it. I guess it's a matter of taste - either you like spaetzle or you don't :-)

This was a delicious spaetzle recipe! I used my spaetzle maker and they came out so yummy and buttery. I will say that my spaetzle were a bit too small and spherical at first so I had to add more milk (3 teaspoons?) to make the dough come out more in the shape of spaetzle.
